Gingerbread biscuits recipe
Makes 60
1 Syn per biscuit
ready in 45 minutes
vegetarian
What you need:
50g unsalted butter
2 level tbsp golden syrup
2 level tbsp light soft brown sugar
225g self-raising flour
1 tbsp ground ginger
1 tsp ground cinnamon
¼ tsp ground cloves
2 level tsp sweetener granules
3 level tbsp skimmed milk
1 level tsp icing sugar, for dusting
What you do:
1. Preheat your oven to 190°C/fan 170°C/gas 5 and cover 2 large baking trays with non-stick baking paper. Melt the butter and golden syrup in a small non-stick pan over a low heat, then remove from the heat, stir in the sugar and set aside.
2. Sift the flour, spices and ¼ tsp salt into a bowl, then stir in the sweetener. Add the melted butter and milk and stir into a dough. Knead until smooth, then halve the dough with a knife.
3. Roll out 1 piece of dough between 2 large sheets of cling film to a thickness of about 3-4mm. Use a 5cm x 5cm (or 6cm x 4cm) cutter to cut out as many biscuits as you can. Lightly re-knead and roll out the trimmings again and again, until all the dough is used up. Repeat with the second piece of dough until you have about 60 biscuits.
4. Arrange the biscuits on the baking trays and bake on the middle shelf of the oven for about 7½ minutes or until they’re starting to brown but are still slightly soft to the touch. Leave to cool, then dust with icing sugar and store in an airtight container.
