Our very own Victor Ohene loves getting creative in the kitchen, and he’s dusted off his ice cream maker to whip up a peanut butter and cinnamon ice cream that’s ideal to keep in the freezer for those longed for hot days. Plus, this simple recipe is just 2½ Syns per serving on the Slimming World eating plan, so you can enjoy your summertime scoops without melting your weight loss goals. We’ll let Victor tell you more…
Victor’s kitchen victories
“Hi, I’m Victor and I’m one of the digital content team here at Slimming World – as well as a very busy dad to a hyper toddler!
I’ve been making Slimming World recipes since I started working here four years ago, after a colleague suggested I try following the eating plan for a month. I used to go to the gym all the time and wondered why I didn’t lose any weight, but it was because I was still eating the same packet-mix recipes and oven pizzas for dinner. After four weeks of Food Optimising, I’d lost 1st and found the food was so much nicer when you knew what was going into it. I’ve never looked back.
I’ve made so many Slimming World recipes now that I think I know most of them off by heart! I’ve started to experiment with my own recipes, too, like using my barbecue smoker to make barbecue pulled pork (the flavours are unreal). I even created my own recipe for the Free Food Festival cook-off – it’s called ‘Sunset Greek lamb’ – and I’ll share that with you another time.

I got the idea for this peanut butter and cinnamon ice cream a few years ago. I’d come across a basic ice cream recipe and thought adding a bit of peanut butter to it would take the flavour to the next level – and I was spot on!
Because it’s so quick and easy to make, it’s great to whip up as a last-minute frozen treat (or if you’ve got some fat-free natural yogurt that’s about to go out of date!). It’s one of my favourite recipes now, and I hope you enjoy it, too.”
Victor’s peanut butter and cinnamon ice cream
serves 2
2½ Syns per serving
ready in 25 minutes
What you need:
350g fat-free natural yogurt
1 level tbsp crunchy peanut butter
2 tbsp vanilla extract
1 tsp ground cinnamon
4 level tsp sweetener
What you do:
- Using an electric whisk, mix the yogurt, peanut butter, vanilla extract and cinnamon in a large bowl until well combined, then stir in the sweetener.
2. Pour the mixture into the container of your ice cream maker. Churn according to the manufacturer’s instructions or until smooth and thickened.
3. If you don’t want to eat it straight away, transfer the ice cream to a freezerproof container. Cover and freeze until ready to serve.

Victor’s recipe looks seriously tasty and I’ll definitely be giving it a try.
