Sunday: Baked spiced salmon with green beans and herby mash
Healthy salmon is a fantastic choice if you fancy freshening up your Sunday lunch repertoire. Our spicy Middle Eastern spin proved to be a hit with Amy, our social media manager – especially the flavour-packed herby mash. She says:
“I’ve always avoided making mashed potato, as I thought it would take loads of time and just end up lumpy, but it couldn’t have been easier and it was so fluffy. The salmon was gorgeously smoky – I actually saved some of the lovely sauce to use as a chicken marinade.”
