What makes these our best-ever brownies is their (not so) secret ingredient… apricots! They bring a natural sweetness and added squidginess to this recipe, making these chocolatey squares a slimmer’s dream dessert or or indulgent-tasting afternoon snack.
Slimming World gooey chocolate brownies recipe

What you need:
110g low-fat spread (up to 30% fat), suitable for baking
4 x 11g sachets low-calorie drinking chocolate powder
4 level tbsp sweetener granules
60g caster sugar
3 eggs
110g self-raising flour
1 level tsp baking powder
200g dried apricots, chopped
1 tsp vanilla essence
1 level tsp icing sugar, to dust
What you do:
1. Preheat your oven to 180°C/fan 160°C/gas 4 and line a 30 x 20cm baking tin with baking paper.
2. Melt the spread in a pan, remove from the heat and stir in the drinking chocolate, sweetener and sugar. Add the eggs and whisk until well-combined.
3. Sift in the flour and baking powder and stir. Add the apricots to the mixture with the vanilla essence and mix well. Pour into the tin and bake for around 20 minutes until just set (it will firm as it cools). Leave to cool completely in the tin. Carefully turn out onto a board and peel off the baking paper. Dust the icing sugar over the top, then cut into 24 squares.
