Biscoff Weetabix cheesecake

Creamy toffee, warming cinnamon and a crunchy biscuit topping… this makes a brilliant brekkie and a just-as-joyous pud! 

serves 1
ready in 10 minutes (plus overnight chilling)
8½ Syns per serving (deduct 6 Syns if you’re having the Weetabix as your Healthy Extra ‘b’ choice)

What you need:

2 Weetabix 
½ tsp cinnamon 
2 tbsp fat-free natural yogurt 
160g no-added-sugar, fat-free toffee yogurt 
1 Lotus Biscoff Original biscuit 

What you do:

1. Put the Weetabix in a bowl and crush them with your hands or a fork. Add the cinnamon and yogurt and mix everything together. 

2. Spoon the mixture into the base of a dessert glass and press it down firmly. 

3. Pour the toffee yogurt evenly over the base. Cover and chill overnight. 

4. Next morning, crumble the biscuit over the cheesecake – and enjoy!

Choc-strawberry Weetabix cheesecake

Chocolate for breakfast? Yes you can with this choccy-based (and choccy-drizzled) strawberry dream.

serves 1
ready in 10 minutes (plus overnight chilling)
8½ Syns per serving (deduct 7½ Syns if you’re having the Weetabix as your Healthy Extra ‘b’ choice)

What you need:

2 Weetabix with Chocolate 
2 tbsp fat-free natural yogurt 
160g no-added-sugar, fat-free vanilla yogurt 
50g fresh strawberries, sliced 
1 level tsp Sweet Freedom Choc Shot 

What you do:

1. Put the Weetabix in a bowl and crush them with your hands or a fork. Add the natural yogurt and mix together. 

2. Spoon the mixture into the base of a dessert glass and press it down firmly. 

3. Pour the vanilla yogurt evenly over the base. Cover and chill overnight. 

4. Next morning, top with the strawberries, then drizzle over the chocolate sauce – and dig in! 

Berry burst Weetabix overnight cheesecake 

serves 1
ready in 10 minutes (plus overnight chilling)
6 Syns per serving (deduct 6 Syns if you’re having the Weetabix as your Healthy Extra ‘b’ choice)

What you need:

2 Weetabix 
200g fat-free natural yogurt 
80g fresh strawberries 
80g fresh raspberries 

What you do:

1. Put the Weetabix in a bowl and crush them with your hands or a fork. Add 2 tbsp of the yogurt and mix together. 

2. Spoon the mixture into the base of a dessert glass and press it down firmly. 

3. In a separate bowl, mix together the remaining yogurt and most of the berries, leaving a few aside. Pour this evenly over the Weetabix base. Cover and chill overnight. 

4. Next morning, top with the remaining berries – and grab your spoon!
