Slimming World’s Free Food Festival is in full swing, and we’ve been getting in on the action by sharing some of our members’ favourite Free Food feasts. From using chicken as a base for pizza toppings or swapping your burrito tortilla for an egg wrap, there’s lots of wonderful ways to turn Free Foods into fantastically filling meals. You’ll definitely never feel bored – or hungry – when you join Slimming World.

We love discovering the slimming-friendly versions of favourite dishes that our members share at their local group and in our online community. So it’s no surprise that Jon’s sausage quiche (or squiche, as he likes to call it!) caught our eye. By passing on the pastry and replacing it with sausage meat, Jon’s created a delicious, filling, veg-packed quiche that’s totally Free!

Jon says: “I came up with the idea on a long Sunday walk with my friend Sandra. We were discussing making something for a taster night in group and, as we both had Syn Free sausages to use up, we hit upon the idea of using them as a base for a quiche!

The great thing about this recipe is it’s so versatile – you can literally use anything as a filling. I made a Christmas-themed one using shredded sprouts, cooked turkey and bacon, and it was surprisingly good. The only limit is your imagination! If you’re feeling really adventurous, try adding some paprika or chilli powder to the whisked egg for a bit of kick.”

Jon Vidler’s Free squiche

Serves 4
Free
Ready in 30 minutes

What you need:

low-calorie cooking spray
6 Syn Free vegetarian sausages, defrosted
2 courgettes, sliced
2 peppers (any colours), deseeded and sliced
2 red onions, finely sliced
3 large eggs
1 tsp dried mixed herbs

What you do:

1. Preheat your oven to 180°C/fan 160°C/gas 4.
2. Lightly spray a 20cm round shallow baking dish with low-calorie cooking spray and set aside.
3. Place the sausages in a food processor and blend until fairly smooth. Transfer this mixture to the prepared baking dish and spread evenly across the base, pushing into the corners of the tin so there’s an overhang of mixture on the sides.
4. Spread the courgettes, peppers and red onions over the sausage mixture.
5. Beat the eggs in a large bowl, season lightly and add the mixed herbs. Pour the egg mixture over the vegetables.
6. Place in the oven and cook for 20 minutes or until set and golden. Remove from the oven and allow to rest for 15 minutes before cutting into wedges.

This can be eaten warm or cold. If serving cold, cool, cover and chill until ready to eat.
