Slimming World ‘Marry me’ sausage pie recipe
serves 2
6 Syns per serving
ready in 60 mins
Tip: Slimming World sausages are available in Iceland and The Food Warehouse stores in the UK, and in Dunnes Stores in the Republic of Ireland.
What you need:
4 Slimming World sausages (or use other low-fat sausages and count the Syns)
low-calorie cooking spray
1 small onion, finely chopped
1 garlic clove, crushed
150g chestnut mushrooms, sliced
1 tsp paprika
½ level tbsp plain flour
100ml skimmed milk
350ml boiling chicken stock
20g sun-dried tomatoes, chopped
1 level tbsp grated Parmesan
½ small bag spinach or baby spinach, chopped
40g reduced-fat puff pastry, cut and rolled into hearts (we made 2 big ones and 2 little ones)
What you do:
1. Preheat your oven to 200°C/fan 180°C/gas 6.
2. Cook the sausages according to the pack instructions, then cut into bite-size chunks.
3. At the same time, spray a non-stick frying pan with low-calorie cooking spray and put it over a medium heat. Add the onion and garlic and cook for 5 minutes or until soft, then add the mushrooms and cook for another 5 minutes.
4. Tip in the paprika and flour and stir continuously for 1 minute. Set aside a splash of the milk then slowly pour the rest into the pan, stirring continuously, followed by the stock and the sun-dried tomatoes.
5. Simmer for 5 minutes, then stir in the Parmesan, spinach and cooked sausage chunks and leave to cook for another minute, or until the spinach has wilted. Season to taste.
6. Pour the sausage mixture into a small ovenproof dish (about 20cm x 15cm), level the surface with a fork and top with the pastry hearts, brushing them with the reserved milk. Bake for 25 minutes or until the pastry is golden, and serve with your favourite potatoes and Speed vegetables.
