Tip: If you’re more of a Creme Egg person, leave out the Mini Eggs and use 12 Mini Creme Eggs, halved. Just pop half an egg on top of each slice (4½ Syns in total per brownie).
What you need:
150g dates, chopped
110g low-fat spread (up to 30% fat), suitable for baking
4 x 11g sachets low-calorie drinking chocolate
4 level tbsp sweetener granules
60g caster sugar
3 eggs
110g self-raising flour
1 level tsp baking powder
1 tsp vanilla essence
48 Cadbury Mini Eggs, half of them roughly chopped, the rest left whole or lightly crushed
1 level tsp icing sugar, to dust
What you do:
1. Preheat your oven to 180°C/fan 160°C/gas 4 and line a 30cm x 20cm baking tin with baking paper.
2. Put the dates in a bowl, cover with just-boiled water and leave to soak for 10 minutes. Drain well.
3. At the same time, melt the spread in a pan, then remove from the heat and stir in the chocolate powder, sweetener and sugar. Add the eggs and whisk until well combined.
4. Sift in the flour and baking powder and stir. Add the dates, vanilla essence and roughly chopped Mini Eggs and mix well. Pour into the tin and bake for 20 minutes, or until just set (it will firm as it cools).
5. Set aside on a rack to cool slightly, then cut into 24 pieces. Top each piece with the remaining Mini Eggs and dust with the icing sugar to serve.
