Slimming World lasagne soup
serves 4

What you need:
low-calorie cooking spray
1 onion, finely chopped
1 large carrot, finely chopped
2 celery sticks, finely chopped
2 garlic cloves, crushed
250g lean beef mince (5% fat or less)
1 tsp dried mixed herbs
500ml passata
1 litre hot beef stock, made with 2 stock cubes
4 large fresh lasagne sheets, cut into strips
200g mozzarella, grated
fresh basil leaves, to serve
What you do:
1. Spray a large, heatproof, non-stick frying pan with low-calorie cooking spray and put it over a medium-high heat. Stir-fry the onion, carrot, celery and garlic for 5 minutes, adding a splash of water if they start to stick. Add the beef and cook for another 5-6 minutes, or until the beef is browned and the veg is softening.
2. Add the herbs, passata and stock, then lightly season and leave to simmer for around 40 minutes until rich and thick. Stir in the lasagne sheets and cook for a further 1-2 minutes until just soft.
3. Preheat your grill to high. Evenly sprinkle over the cheese, then pop under the grill for 2-3 minutes until golden and bubbling. Divide equally between 4 bowls and scatter over the basil leaves.
