Raspberry and coconut balls recipe
makes 8
6½ Syns per ball (deduct 6 Syns if using dates and cashews as a Healthy Extra ‘b’ choice)
ready in 10 mins (plus 1 hour chilling)
What you need:
160g dates without stones
90g cashew nuts
2 level tbsp freeze-dried raspberries
2 level tsp desiccated coconut
What you do:
1. Put all the ingredients in your food processor and pulse to combine, scraping down the sides so you don’t lose any mixture.
2. Roll the mixture into 8 equal-size balls and chill for an hour or until set. They’ll keep in an airtight container in the fridge for up to a week, or you can freeze what you don’t need.
