Salt and pepper tofu recipe

What you need:
2 level tbsp cornflour
1 tsp freshly ground Sichuan peppercorns (or black peppercorns)
400g plain firm tofu
low-calorie cooking spray
400g mixed stir-fry vegetables
4 spring onions, thinly sliced on the diagonal, to serve
sliced red chilli, fresh coriander sprigs, soy sauce (or tamari) and plain boiled rice, to serve
What you do:
1. Mix the cornflour, ground Sichuan pepper and ½ tsp salt in a shallow bowl.
2. Pat the tofu dry with kitchen paper, then cut the block into 18 triangles. Add them to the Sichuan pepper mix and toss to coat well.
3. Spray a large non-stick frying pan or wok with low-calorie cooking spray and put it over a high heat. Add the mixed veg and stir-fry for 3 minutes. Transfer to a bowl and cover to keep warm.
4. Spray the pan again, add the tofu and fry for about 6 minutes on each side, or until crisp and golden.
5. Put the mixed veg on a serving platter, top with the tofu and serve with the spring onions, chilli and coriander scattered over and with the soy sauce or tamari and a bowl of rice on the side.
