We’ve got lots of slimming-friendly ice cream recipes up our sleeves at Slimming World – and this is one that we’re particularly proud of. Introducing our first-ever low-Syn vanilla vegan ice cream! This delicious vanilla ice cream is a dairy-free dream, using soya drink as the main ingredient. Keep a tub in the freezer for those ‘fancy an ice cream’ moments.
Recipe for dairy-free ice cream

2½ Syns per scoop
10 minutes plus 6 hours cooling and freezing

Tip: This recipe will also work well in an ice cream maker, if you have one.
What you need:
450ml soya drink, plain and unsweetened, with added calcium
25g cashew nuts
2 level tbsp plain porridge oats
1 tbsp vanilla extract
2 level tbsp maple syrup
1 tsp xanthan gum
fresh summer fruits, to serve (we went for blueberries, raspberries, blackberries and figs)
How to make dairy-free ice cream
1. Put the soya drink in a non-stick saucepan and add the cashews, oats, vanilla and maple syrup, stir well then leave to soak for 2 hours or overnight.
2. Bring the mixture in the pan to a gentle boil, then turn off the heat and leave to cool. Once it’s cool, mix in the xanthan gum and pour it into your food processor. Whizz for 30 seconds or until thick.
3. Pour the mixture into a freezer-proof container and put it in the freezer.
4. After an hour, take it out and beat well with a wooden spoon. Return to the freezer and repeat the beating process 2 more times before returning it to the freezer to freeze completely.
5. Take the ice cream out 10 minutes before you want to eat. Serve one scoop per serving with the fresh fruit.
