Slimming World strawberry ice cream

Slimming World strawberry ice cream

serves 4
4 Syns per serving
ready in 15 minutes, plus freezing
vegan

What you need:

2 medium over-ripe bananas
125g fresh strawberries, hulled and chopped, plus extra to serve
200g Alpro Plain Greek Style yogurt
1 ½ level tbsp golden syrup
1 tsp vanilla extract
4 vegan ice cream wafers
1 level tsp vegan hundreds and thousands, to decorate

What you do:

1. Peel and slice the bananas. Put the bananas and chopped strawberries in a freezerproof container, seal and freeze overnight.

2. Once solid, tip into a food procesor. Add the yogurt, golden syrup and vanilla extract, then blitz until smooth. Spoon into a freezerproof container, seal and freeze for at least 2 hours.

3. Divide the ice cream between 4 dessert glasses. Add a wafer to each and a few strawberry quarters. Evenly scatter over the sprinkles and serve straight away.
