Slimming World Marmite pasta recipe

Tip: To make this dish vegetarian, leave out the chicken or swap it for 450g chunks of plain tofu and use vegetable stock instead of chicken. To cook the tofu, lightly spritz a non-stick frying pan with low-calorie cooking spray and fry the chunks for 2-3 minutes on each side, until slightly browned and crispy.
What you need:
low-calorie cooking spray
450g boneless and skinless chicken breasts, cut into chunks
400g dried penne or other pasta shapes
200g sugar snap peas, sliced diagonally
200g broccoli, chopped into small florets
1½ tsp Marmite yeast extract
200g plain quark
180ml hot chicken stock
What you do:
1. First, cook the chicken. Preheat your grill to medium-hot, line a baking tray with foil and spray it with low-calorie cooking spray. Arrange the chicken in a single layer on the tray and grill, without turning, for 10-12 minutes, until cooked through. Cover loosely with foil to keep it warm.
2. Next, cook the pasta in boiling water for 7 minutes. Throw in the sugar snaps and broccoli and cook for 4 minutes more, or until the pasta and veg are tender but still have a bit of bite. Drain, then return to the pan.
3. While the pasta’s cooking, put the Marmite, quark, stock and a little salt and freshly ground black pepper in a large bowl. Mix well to make a thick sauce.
4. Add the sauce to the pasta and veg, tip in the chicken and stir until everything is well coated. Divide between four bowls and add a twist of black pepper to serve.
