Serve up a plate of our strawberry cheesecake bites at a party or picnic – or enjoy as a tasty treat in front of the tennis this Wimbledon fortnight. It’ll be game, set and match to these fruity beauties!
Strawberry cheesecake bites recipe
makes 32 bites
½ Syn per bite
ready in 15 minutes
What you need:
100g reduced-fat plain soft cheese
100g fat-free natural Greek yogurt
¼ tsp vanilla extract
1 level tsp sweetener granules
pink food colouring (optional)
16 strawberries, halved lengthways
½ level tsp sprinkles
What you do:
1. Mix together the soft cheese, yogurt, vanilla extract and sweetener until velvety smooth. Add the food colouring (if using) a drop at a time, stirring well after each drop, until the mixture is a light-pink colour. Spoon it into a piping bag.
2. Pipe rosettes onto the cut sides of the strawberry halves by gently squeezing the piping bag and pulling away. Arrange the strawberries on a serving plate, evenly scatter over the sprinkles and serve straight away.
