With two juicy burgers and loads of salad in a toasted bun (plus a fried egg for good measure), the Big Daddy burger is tastier than any takeaway version – plus, you don’t have to wait in a drive-thru queue to get your hands on one!
Slimming World’s Big Daddy burger
serves 4
6½ Syns per serving (deduct 6 Syns if using 60g wholemeal roll as your Healthy Extra ‘b’)
ready in 25 minutes
What you need:
1 medium onion, finely chopped
4 garlic cloves, crushed
1kg lean beef mince (5% fat or less)
2 tbsp Worcestershire sauce
low-calorie cooking spray
4 eggs
4 x 60g wholemeal rolls
sliced tomato, lettuce leaves and sliced red onion, to serve
4 level tbsp reduced-salt-and-sugar tomato ketchup
What you do:
Preheat your grill to high.
1. Put the onion, garlic, beef and Worcestershire sauce in a bowl, season lightly and combine using your fingers. Divide the mixture into 8 equal portions and shape them into burgers.
2. Spray the burgers with low-calorie cooking spray and grill for 10-12 minutes or until cooked through, turning halfway.
3. Meanwhile, spray a non-stick frying pan with low-calorie cooking spray and place over a medium heat. Add the eggs and fry to your liking.
4. Split and toast the rolls, then fill each one with tomato, lettuce, red onion, 2 burgers, 1 level tbsp ketchup and an egg. Season lightly and hold it all in place with a cocktail stick if needed (don’t forget to remove before eating!).
5. Serve hot with Slimming World chips and salad.
Top tip: If you’d like to save 6 Syns, count the bread roll as your Healthy Extra ‘b’ choice, or serve your burgers between cooked portobello mushroom ‘baps’ instead.
