Serves 4

  • 600g skinless and boneless chicken breasts, cut into strips
  • 2 large red peppers, deseeded and thinly sliced
  • 2 large red onions, each cut into 8 wedges
  • 260g baby corn, halved lengthways
  • 2 tsp smoked paprika
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • 1 cal cooking spray*
  • 400g can black beans, drained and rinsed
  • 400g can red kidney beans, drained and rinsed
  • 1 romaine lettuce, shredded
  • 4 tbsp fat-free natural Greek yogurt, to serve

For the salsa:

  • 300g tomatoes, roughly chopped
  • 1 small red chilli, deseeded and finely chopped
  • Grated zest and juice of 2 unwaxed limes, plus slices
  • 2 tbsp chopped fresh coriander, plus sprigs to serve
