Makes 2
- 50g strong bread flour
- ½ x 7g sachet instant active yeast
- Low-calorie cooking spray
- ½ red pepper, halved, deseeded and sliced
- ½ yellow pepper, halved, deseeded and sliced
- ½ small red onion, cut into thin wedges
- 1-2 baby courgettes, thinly sliced or peeled into ribbons with a peeler
- 70g reduced-fat mozzarella, cut into chunks
- Small handful of fresh basil leaves, to serve
For the tomato sauce:
- 2 shallots, finely chopped
- 1 garlic clove, crushed
- 1 tsp dried oregano
- 200g canned tomatoes
- 2 tbsp tomato purée
- Small handful chopped fresh basil
For the rainbow slaw:
- ¼ red cabbage, cored and sliced
- 1 large carrot, shredded
- 1 fennel bulb, trimmed and shredded
- 3 tbsp fat-free natural yogurt
- 1 tbsp chopped fresh parsley
